Menu for 11/2/09 thru 11/16/09:

Monday- Mexi Shells and steamed carrots
Tuesday- Gorgonzola & Toasted Walnut Salad, Steaks, and green beans
Wednesday- Ribs, twice baked potatoes, and steamed broccoli and cauliflower
Thursday- Go out to eat (your choice) HAHA
Friday- Spaghetti with white clam sauce and salad
Saturday- Soft tacos
Sunday- Swiss steak. loaded mashed potatoes, and salad

Monday- Homemade pizza and salad
Tuesday- Kraut and sausage with rolls and salad
Wednesday- Bacon Lasagna and salad
Thursday- Fried rice
Friday- Goulash and green beans
Saturday- Leftovers :-( Sorry but I had too much in my fridge
Sunday- 59 cent tacos at Taco Tico- Sorry its an addiction! I gotta have my Sunday tacos!

Shopping List: (You may have to go through some of the recipes and see if you have all ingredients)
1 box lasagna noodles
1 box jumbo shells
1 jar spaghetti sauce of your choice (for pizzas)
4 cans tomato sauce (8 oz)
1 can green chilies (4.5 oz)
1 can chili beans
2 cans minced clams (6.5 oz)
1/3 cup walnuts (I just bought a big bag and reused this dressing through out the week)
1 pkg Gorgonzola cheese
1 pkg shredded mozzarella cheese
1 pkg shredded cheddar cheese
2 boxes Jiffy pizza dough
1 head Bib lettuce
1 green bell pepper
4 yellow onions
2 head fresh broccoli
1 head fresh cauliflower
1 bag fresh carrots
1 head iceberg lettuce
1 bag russet potatoes
1 pkg pepperoni
1 pkg Canadian bacon
1 pkg hamburger (I buy in 5 lbs roll)
1 pkg chuck steak about 3/4" thick
1 pkg bacon
1 pkg sour cream and chive dip

Recipes:
Mexi Shells (Betty Crocker Cookbook)
1 pkg jumbo pasta shells
4 cans tomato sauce
2 tbls flour
1 tsp chili powder
2 tsp ground cumin
1 lb ground hamburger
1 small chopped onion
1 tsp ground cumin
1 tbls fresh cilantro
1 can green chilies. drained
1 can chili beans
1 cup shredded mozzarella cheese

1. Heat oven to 350. Cook pasta according to package directions.
2. Mix tomato sauce, flour, chili powder, and 2 tsp cumin and set aside.
3. Cook ground beef and onion beef is done, drain, add cumin, cilantro, green chilies, and chili beans.
4. Drain pasta, take 1 cup of tomato sauce mixture and spread on 13 by 9 dish, stuff shells with meat mixture, put stuffed shells filled side up, cover with the rest of tomato sauce and sprinkle with cheese. Bake 30 min.

Walnut & Gorgonzola Salad (Betty Crocker Cookbook)
1/3 cup olive oil
1/3 cup walnuts
2 tsp lemon juice
1 clove garlic (or use 1/4 tsp garlic salt)
1/8 tsp salt (if you use garlic salt, skip this ingredient)
dash of pepper

Put all ingredients in a blender and blend till smooth.

Use the head of bib lettuce, 1/3 cup chopped onion, 1/2 cup Gorgonzola cheese, and dressing mix together.

Ribs (COOKS.COM)
2 med onions
2 tsp Worcestershire sauce
1/2 tsp chili powder
3 tsp vinegar
1 cup catsup
1 cup brown sugar

Brown ribs before placing them in crock pot. Mix all the above ingredients together. place ribs in crock pot add sauce and cook on low 8 hours.

Twice baked potatoes (Tim's Recipe)
4 russet potatoes
sour cream and chives dip
cheddar cheese

Cook potatoes in microwave till done, cut potatoes about 3/4 up on potato, scrape out inside, mash and add 1 cup dip and 1 cup cheese. Re-stuff potatoes then top with cheese, bake till cheese is melted.

Spaghetti with white clam sauce (Betty Crocker Cookbook)
1 pkg spaghetti (7 oz)
1/4 cup butter
2 cloves garlic minced
2 tbls parsley
2 cans minced clams
1/2 cup grated Parmesan cheese

1. Cook spaghetti according to box directions.
2. Melt butter with garlic, cook 3 min, add parsley and clams cook 4 minutes.
3. Drain spaghetti and mix clam mixture and cheese.

Swiss steak (Betty Crocker cookbook)
1 1/2 lb chuck steak
3 tbls flour
1 tsp ground mustard
1/2 tsp salt
2 tbls oil
1 can whole tomatoes (14.5 oz), undrained
2 cloves garlic minced
1 large onion
1 green bell pepper

1. cut meat into 6 servings, mix flour, mustard, and salt, pound flour mix into beef, flip and repeat.
2. Heat oil in 10" skillet, cook beef 7 min on each side.
3. Add tomatoes and break up, add garlic, onion, and bell pepper. Cook 1 hour 15 min spooning sauce over beef occasionally.

Pizza
1. Make crust according to package directions
2. Spread spaghetti sauce on baked crusts, then top with toppings of your choice (we used the pepperoni, Canadian bacon, hamburger,and cheese).
3. Add mozzarella cheese and bake till cheese is melted.

Bacon Lasagna (Betty Crocker Cookbook)
1 lb ground beef
2 medium onions chopped
1/4 tsp salt
1/8 tsp pepper
2 cans chunky tomato sauce (15 oz each)
1 cup water
1 egg
1 pkg ricotta cheese (15 oz)
1 cup shredded swiss cheese
1/4 cup fresh parsley
8 slices bacon (cooked crispy, then crumbled)
1 pkg lasagna noodles
2 cups shredded cheddar cheese

1. Heat oven to 350. Cook hamburger, onions, salt, and pepper till hamburger is done. Stir in tomato sauce and water, heat to boiling, then turn down heat and simmer 10 minutes.
2. Beat egg with fork, then add ricotta cheese, swiss cheese, parsley, and bacon.
3. Spread 1 cup beef mixture in the bottom of a 9 by 13" pan, top with 4 uncooked lasagna noodles. Top with half of the ricotta cheese mixture, 2 cups beef mixture, and 3/4s of a cup of cheddar cheese. Repeat till pan is full. Spray a piece of foil with non stick cooking spray and cover, bake 45 minutes. Uncover and bake another 30 minutes or until bubbly and golden brown.

Fried rice (my recipe)
1 cup white rice
1 pkg frozen stir fry veggies
2 boneless skinless chicken breasts
6 eggs
Soy sauce
1 can mushroom pieces
What ever left overs you have work great!!! We use chicken, bacon, veggies in fridge already cooked whatever we have.

1. Cook rice according to package directions, add 2 tsp chicken bullion. Cook veggies according to package directions. Season chicken and cook on indoor grill. Take the eggs and scramble. Start mixing everything in a big skillet with butter in the bottom and "fry". Add enough soy sauce to your liking. Enjoy!

Goulash
2 cups macaroni noodles
2 can diced tomatoes
1 can tomato sauce
1 lb hamburger
1 small onion chopped
1/2 tsp garlic salt
1/4 tsp pepper
1/4 tsp cajun seasoning
1/2 tsp chili powder

1. Cook macaroni according to package directions. Cook hamburger with onion and season hamburger to your liking. Once hamburger and macaroni is cooked drain and add to same pan. Add remaining ingredients and simmer 15 minutes.
